Gluten Free Weet-Bix Bars

Ingredients

8 gluten free Weet-Bix

1 cup pitted dates

1/2 cup diced almonds, sunflower seeds, linseed (any kind of seed mix is fine)

1/2 tsp vanilla paste

1/2 cup desiccated coconut

2 tbsp almond butter

1 tbsp cocoa

1/2 cup coconut oil, melted

Directions

1Line a loaf tin with baking paper.

2Place dates in a bowl and cover with boiling water for 5 minutes.

3Place Weetbix, dates, vanilla paste, coconut, almonds and cacao in food processor and mix until combined.

4Melt coconut oil and add to the mix. Transfer to a large bowl and stir in seeds.

5Pour into loaf tin and press down with a spoon.

6Freeze for one hour.

7Cut and store in fridge in airtight container.

This is a great slice for kids and energetic people. I like taking it on a ride or having some at 3pm when I get a bit flat.
