Makes approx 12 balls
1 grated carrot
1/3 cup coconut oil
1/2 cup shredded coconut
1 1/4 cups chopped walnuts
1/3 cup sultanas
1 tsp cinnamon
2 tbsp maple syrup
1 tsp vanilla essence
1 pinch Salt
Additional shredded coconut for rolling
1Place all ingredients into a food processor.
2Roll processed mixture into balls.
3Coat evenly with additional coconut.
4Serve and enjoy.
These will keep in a sealed container in the fridge for a few days...but probably won't last that long!!
