1Make zucchini noodles in 'Zoodler'. If you don't have one, just take your time to slice thinly.
2Heat oil in pan over medium heat. Add chicken breast and cook for 4 minutes each side until golden. Test to ensure it is cooked through then once cooked, cut into slices.
3Add oil to large fry pan and fill 1 cm of water. Add zucchini and toss adding lemon, salt and pepper. Toss for 30-60 seconds. Drain.
4Place rocket on plate and add zucchini noodles, chicken, pesto sauce and pepper.
1Put all ingredients in food processor or blender until you have achieved your desired consistency. If needed, add a little water.
